lentil roast
needs
8 oz red lentils
4 oz white rice
5 oz grated cheese
2 slices wholemeal bread (crumbed)
1 tsp Marmite
1 onion
2 cloves garlic
steps
cook the lentils & rice until soft.
finely chop the onion & garlic.
sweat the onion & garlic gently in some oil.
stir the Marmite, salt, and pepper into the lentils.
stir the rice & onions into the lentils.
stir in the cheese while the mixture is still hot.
stir in the breadcrumbs to stiffen the mix.
pour into a greased loaf tin.
cover the tin with foil.
bake in the middle of a 180C oven for 30 minutes.
remove the foil.
continue baking for 15 minutes.
leave to cool for 10—15 minutes.
