300g gluten-free bread flour (Dove's Farm works well).
80g ground almonds.
1 tsp baking powder (check your brand is gluten-free).
1 tsp mixed spice.
2 tsp ground ginger.
1/2 tsp ground nutmeg.
1/2 tsp ground cloves.
80g butter.
100g honey.
100g black treacle (molasses).
100g dark brown sugar.
1 egg.
some lemon juice.
2-3 tbsp mixed peel.
1 egg white.
125g icing sugar.
steps
mix the flour, ground almonds, baking powder, and spices together in a large mixing bowl.
melt the butter in a saucepan together with the honey, treacle, and brown sugar.
leave on a low-medium heat until completely dissolved
remove from the heat and leave to cool for a few minutes.
stir in a beaten egg and the lemon juice.
stir the wet ingredients into the dry
stir in the mixed peel.
cover and leave in the fridge for at least a few hours, or overnight.
preheat the oven to 175C.
lightly dust a surface with flour and roll the dough out until about 1cm thick.
cut into shapes.
bake for about 10 minutes, or until the tops start to crack slightly.
wait for them to completely cool.
make a glaze with the egg white and icing sugar.
dip the lebkuchen in the glaze, or brush the glaze over them.
