needs
3-4 eggs (~200g, weigh them in their shells)
200g butter (or equal weight)
200g sugar (or equal weight)
200g flour (or equal weight)
2 lemons
100ml gin
150g sugar for icing
100ml gin for icing
steps
cream together the sugar and butter.
crack in the eggs.
mix in the flour.
add the zest of 2 lemons.
add the juice of 1 lemon.
add the 100ml gin.
into loaf tin.
into oven at 180C.
drizzle more gin in at points while cooking.
to ice, combine the sugar, gin, juice of the other lemon, and a dash of tonic.
prick the top of the cake with a fork.
drizzle the icing over the cake.
